Festive Bite-Sized Treats: How to Utilize Christmas Leftovers into NYE Canapes
What kinds of bite-sized appetizers can I whip up for New Year’s Eve using my Christmas leftovers that will still impress guests?
Finger food doesn't have to be elaborate, so New Year's offers a great opportunity to use up what's left. The main guideline is to stick to items to just one bite—no one wants to manoeuvre a fork. Guests just want a comforting taste of comfort food with a luxurious touch.
If you have a bit of cured fish left, place it on blinis and top it with affordable roe. Small patties are also an ideal choice: Whether you've got remaining fish or hot smoked salmon, fold it through mashed potato, blend with dill, citrus, and fried leeks, then coat in panko and deep-fry.
You could also get creative with Spanish croquettes. Prepare the white sauce a few days ahead, then use leftover ham, chicken, or foraged fungi for the filling. Blitz stale bread into crumbs to coat them, then fry. Sausage roll mixtures are another natural home for those breadcrumbs, or use them as a jacket for bite-sized chicken. Seasoning-wise, all you need a bit of citrus zest and thyme, and they'll taste so much more. Incidentally, buttery pastries make excellent crumbs, too.
One beloved treat at this time of year is a leftovers sandwich, and that doesn't have to stop after Boxing Day. Place some holiday meats in an airtight container and store in the freezer. While you're at it, set aside some cranberry sauce and honey ham glaze in the fridge. When needed, defrost the meat, then pop it in a preheated oven with the saved glaze for a short time. Let it cool and slice thinly, then lay on top of some artisan bread and assemble mini sandwiches with lots of cranberry sauce. Cut into small squares for a surefire hit.
Leftover turkey, meanwhile, could be transformed into a spicy, crisp salad. There’s always a bit of turkey leg left over, and it's perfect for something punchy. Pull the meat, then crisp it slowly in a pan, and toss with remaining sauce loosened with lime juice, a spoonful of soy sauce and a little spicy oil. Finish with fresh herbs and some sliced spring onion, and serve in small lettuce cups.
Transforming Remaining Veg
Vegetables, meanwhile, can be scrubbed up and fit for a party with a big batch of fried potato cake. Mix all your remaining vegetables with fresh herbs, then add salt and pepper and incorporate a binding agent. Cut out portions to roughly the size of small rounds, then store in the icebox. Refresh in a hot oven for a few minutes and top with your choice of topping—perhaps sliced beef and grated horseradish. A good tip, though: set some aside for a late breakfast the next day.
